Pork

We believe that pigs should be fed and reared as naturally as possible and therefore none of our pig's feed contains either 'growth promoters' or chemical additives. Our pig’s diet consists of at least 50% fresh fruit and veg every day with care taken to ensure strong flavoured plants such as onions, garlic and peppers are not fed to pigs destined for meat so as not to taint the flavour. The life of one of our meat pigs is approximately 6 months compared to 15 weeks that a commercial pig is killed at. This “slow grown” approach ensures that the meat matures on the pig longer giving it real flavour, unlike the card-board taste from commercial pigs.

We believe that it is most important to ensure that even when one of our rare breed pigs is being reared for meat that the standards of butchery and of the abattoir are the highest possible. By using a small private abattoir we can ensure that our pigs are not stressed (An adrenaline 'rush' can taint the meat) and we also make sure our pigs are not put in pens with other stock with whom they might fight. Not only will fighting cause stress and the production of adrenaline but it can also causes capillary bleeding that affects the meat texture and appearance.
All meat is hung before being professionally jointed to individual requirements, wrapped and boxed ready for the freezer. Both our butcher and abattoir are fully licensed with a meat inspector present at all times. The standards of hygiene, quality and care of the animals could not be higher. We do not allow our pigs to remain overnight before dispatch and arrangements are made to ensure that any waiting time is minimal
.

The meat we sell contains no saline solutions to bulk it up therefore joints don’t shrink in the oven and the bacon doesn’t swim out of the pan in white foam.

Our sausages are made from prime cuts of pork. Not leftovers and definitely no other animal parts like most supermarket sausages. Our butcher uses the minimum amount of rusk to bind the meat giving the sausages a real meaty texture that are a pleasure to eat.
